120 grams Arborio rice
1 egg yolk
500 grams ripe Strawberries
1 Tbsp honey
5 Tbsps balsamic vinegar
½ bunch Basil
12 Ladyfinger
¼ tsp ground cinnamon

Preparation steps

1.

Scald half the milk, a pinch of salt, 4 tablespoons of the sugar, and the lemon zest. Add the rice and simmer over low heat, stirring occasionally, until tender, about 25 minutes. Transfer the mixture to a bowl, cover with plastic wrap and leave to cool. Then mix in the egg yolks.

Rinse, the strawberries and cut into small pieces. Mix with honey and set aside.

Dissolve 1 tablespoon sugar in a saucepan with the vinegar and remove from heat. Rinse the basil, shake dry and pluck the leaves.

Crush the ladyfingers into fine crumbs and toast briefly in a hot, dry pan.

5.

Shape the rice dumplings into small balls. Combine the remaining   milk and the butter in a pot. Warm the rice balls in the milk mixture. 

6.

Mix the crumbs with the remaining sugar and cinnamon. Take the rice dumplings out of milk and roll in the crumb mixture. Arrange the strawberries on a serving plate, drizzle with vinegar, and arrange the dumplings in the center. Serve garnished with basil leaves.
