1 tsp lemon juice
2 tsps pickled green peppercorns (from a jar)
150 grams cured ham (thinly sliced)
Basil (for garnish)
80 grams Parmesan (piece, for shaving)

Preparation steps

Pick through the strawberries, rinse, trim, and cut crosswise into discs. Mix the balsamic cream with the lemon juice and 1 teaspoon of the brine from the peppercorns. Spoon the mixture over the strawberries, let stand 1 hour and arrange on plates.

Loosely pile the ham slices onto the strawberries. Drain the peppercorns and sprinkle over the strawberries. Serve garnished with basil leaves and freshly shaved Parmesan.
