- 3 large eggs (separated)
- 2 Tbsps granulated sugar
- ⅓ cup Whole milk
- 2 Tbsps all-purpose flour
- 1 Tbsp Orange zest
- 2 Tbsps Cointreau
- 2 Tbsps unsalted butter (melted)
- ⅓ cup superfine caster sugar
- 2 Tbsps water
- 1 Orange (segmented)

Preparation steps
1.
Beat the egg whites with the granulated sugar in a clean mixing bowl until stiffly peaked.

Beat together the egg yolks, milk, flour, orange zest, and Cointreau in a separate mixing bowl until smooth. Whisk one third of the egg whites into the egg yolk mixture, and then fold through the remaining egg whites.

Grease four microwaveable mugs with the butter and then divide the batter between the mugs. Chill until ready to cook.
4.
Stir together the caster sugar and water in a microwaveable jug. Cook in the microwave on high for 1 minute. Remove, stir, and continue to microwave in 10 second increments until an amber caramel forms.
5.
Microwave the souffles on high in 30 second increments until they are risen above the rim of the mugs. Remove from the microwave and serve with the caramel and orange segments on top.
