- ⅔ cup double cream
- ⅓ cup Golden syrup
- 2 Tbsps soft light brown sugar
- 2 Tbsps unsalted butter
- ½ cup Margarine (softened)
- ½ cup superfine caster sugar
- ⅔ cup self-rising flour (sifted)
- 2 large eggs
- 1 tsp vanilla extract

Preparation steps
1.
Combine the cream, Golden Syrup, brown sugar, and butter in a microwaveable jug or bowl. Microwave on high for 2 minutes, stirring after 1, until golden in appearance.

Divide half of the sauce between four microwaveable mugs. Set the remainder to one side.
3.
Beat together the remaining ingredients in a large mixing bowl until smooth. Spoon the batter on top of the sauce in the mugs. Cover with clingfilm, poking a few holes in the clingfilm.
4.
Microwave on high for 1 minute. Check for doneness; if a wooden toothpick comes out clean, they are done. If not, continue to microwave in 10 second increments until done.
5.
When ready, spoon over the remaining sauce before serving.
