0.333 cup brown sugar
1 cup flour (scant)
1 generous pinch Baking powder
cup cocoa powder
2 small Banana
1 Tbsp clear honey
1 Tbsp lemon juice
½ cup low-fat Margarine (or butter)
Cocoa (for dusting)

Preparation steps

Prepare four microwavable ramekins. Cut four strips of greaseproof paper 7.5 cm wide and place around the top edge of the ramekins to form a collar. Secure with adhesive tape. Cream 100 g margarine with the sugar either in a food mixer or food processor, until light and fluffy. Add the eggs one at a time, beating well between each addition, and mix until the mixture has a homogenous consistency. Mix the flour, cocoa and baking powder and fold into the egg mixture. Peel one banana and chop or mash with a fork. Fold into the mixture. Grease the ramekins with the remaining margarine and divide the mixture between them.

Put the ramekins into the microwave and cook on the highest setting for 4 minutes. Leave to rest for 3 minutes, then remove the paper collars.

Peel the other banana, put on a plate and sprinkle with honey and lemon juice. Cook in the microwave for about 30 seconds. Place a few slices on top of each pudding and serve dusted with cocoa.
