- 14 ozs Chicken breasts
- salt
- freshly ground peppers
- 3 Tbsps olive oil
- 2 Bell pepper (red and yellow, seeds removed, cut into strips)
- 1 red chili pepper (seeds removed, finely chopped)
- 2 Red onions (chopped)
- 4 soft Tortillas
- To garnish
- salad

Preparation steps
1.
Season the chicken with salt and pepper.
2.
Heat half the oil in a frying pan and cook the chicken for 6-8 minutes, turning occasionally. Remove from the pan, cool slightly and cut into strips.
3.
Heat the oven to 180°C (160° fan) 350°F gas 4.
4.
Heat the remaining oil in the frying pan and cook the vegetables for 4-5 minutes until tender. Season with salt and pepper.
5.
Wrap the tortillas in foil and heat through in the oven briefly.
6.
Mix together the chicken and vegetables and divide between the tortillas. Roll up the tortillas and cut into slices. Serve garnished with salad leaves.
