- For the salsa
- 3 ⅓ cups ripe Tomatoes
- 2 Tbsps olive oil
- 2 cloves garlic cloves (finely chopped)
- 1 shallot (finely chopped)
- 2 red chili peppers (chopped)
- 2 Tbsps tomato puree
- ⅔ cup vegetable stock
- salt
- freshly ground peppers
- dark balsamic vinegar (to taste)
- For the burgers
- 1 clove garlic cloves (finely chopped)
- 3 ⅓ cups ground Beef
- 1 tsp medium hot Mustard
- 1 egg
- 4 Tbsps breadcrumbs
- For the onion rings
- 2 onions (cut into rings)
- 1 ⅓ cups self-rising flour (sifted)
- 1 cup light beer
- 1 egg
- ½ tsp salt
- 1 egg white
- 2 cups vegetable oil (for frying)
- To serve
- 4 Burger buns
- Lettuce
- 4 Tomatoes (sliced)
- 1 Red onion (sliced)
- 4 Tbsps Mayonnaise
- 12 Tortilla chip

Preparation steps
1.
For the salsa: plunge the tomatoes into boiling water for 1 minute. Rinse in cold water, then remove the skins and cores and cut into dice.

Heat the oil in a pan and gently cook the garlic, shallots and chillies until softened. Add the tomatoes, tomato puree and stock. Season to taste with salt and pepper and bring to a boil. Reduce the heat and simmer for 15 minutes. Season to taste with vinegar.

For the burgers: mix together all the ingredients and season to taste with salt and pepper. Shape into 4 patties.

For the onion rings: whisk together the flour, beer, egg and salt. Cover leave to swell for 15 minutes.

Stir the batter vigorously. Whisk the egg whites stiff and fold into the batter.

Heat the oil in a fryer or deep heavy-based pan.

Dip the onion rings into the batter and deep fry in the hot oil until golden. Remove and drain on absorbent kitchen paper.
8.
Heat the grill.
9.
Halve the buns and lightly toast under the grill.
10.
Grill the burgers for about 4-5 minutes on each side until cooked through.
11.
Spread the bases of the buns with mayonnaise, add the onion rings, lettuce, tomato slices and red onion rings. Place the burgers on top, add the tortilla chips and spoon a little salsa on top. Place the tops on the buns.
