Preparation steps

Peel the melon, remove the seeds, and cut the fruit into cubes. Mix with the cinnamon and sugar in a sauce pan. Simmer for 20 minutes over low heat until the liquid has almost evaporated. Remove from the heat and let cool.

Stir the mascarpone into the cooled melon mixture. Season with lemon juice, cover, and refrigerate. Serve in dessert bowls garnished with edible flowers (such as nasturtium).
