14 ozs turkey breasts (skinned)
1 ¼ inches freshly grated ginger (peeled and grated)
3 Tbsps honey
1 Tbsp Dijon mustard
3 Tbsps soy sauce
3 Tbsps olive oil
2 Tbsps chopped thyme
12 cherry Tomatoes
12 button Mushrooms
3 small Red onions (or shallots)
½ cup vegetable oil

Preparation steps

1.
Cut the turkey meat into bite-sized chunks.
2.
Mix together the ginger, honey, mustard, soy sauce, olive oil and chopped thyme. Add the turkey chunks and mix well then set aside to marinate for one hour.
3.
Heat the grill to its highest setting, or set a griddle pan over a high heat.
4.
Remove the turkey from the marinade and wipe with kitchen paper. Brush the tomatoes, mushrooms, onions and turkey pieces with the vegetable oil and thread onto wooden skewers.
5.
Grill the kebabs for 8-10 minutes, turning from time to time, or until the turkey is cooked through.
