- 1 kilogram roasted pork roulade (ready to cook)
- 1 Tbsp sun-dried tomato pesto
- salt
- freshly ground peppers
- 2 onions
- 4 garlic cloves
- 100 grams dried Tomatoes (in oil)
- 150 grams black, pitted Olives
- 4 Tbsps olive oil
- 2 Tbsps chopped Pine nuts
- 100 milliliters dry white wine
- 2 rosemary
- 1 thyme
- 2 Sage
- 150 milliliters Beef broth
Preparation steps

Preheat oven to 180°C (approximately 350°F).

Rinse meat, pat dry and spread pesto on thinly. Season with salt and pepper. Peel onions and cut into eighths. Peel garlic. Drain tomatoes and olives and chop. Mix 1/3 of tomatoes and olives together with 2 tablespoons olive oil, pine nuts, 2-3 cloves of garlic and a few onion pieces. Spread onto meat, roll tightly and secure with kitchen twine.

Heat remaining oil in a roasting pan, spread around and pour in wine. Add remaining olives, tomatoes, garlic and onions along with herbs. Pour in broth, add roast and roast for 1 1/2-2 hours, basting with broth as needed.

Before serving, remove the kitchen string and slice.
