1 kilogram potatoes
250 grams Tomatoes
200 grams button Mushroom
250 grams Zucchini

Preparation steps

Mix 80 ml (approximately 1/3 cup) oil with lemon juice, mustard and herbs. Season with salt and pepper. Peel garlic and squeeze through a press into the oil mixture. Rub over the meat, place in a freezer bag and marinate overnight in the refrigerator.

Drain the meat, reserving the marinade. Put meat in a large roasting pan and roast in a preheated oven at 200°C (approximately 400°F) for about 1 hour and 30 minutes.

Meanwhile, peel potatoes and cut into eighths. Peel the onions and dice. Mix both with the reserved marinade. After cooking meat 45 minutes, add potatoes and onions to roasting pan and continue to roast everything.

Rinse and chop the tomatoes. Trim the mushrooms and cut into slices. Rinse zucchini, trim and chop. Heat the remaining oil in a large frying pan, add vegetables and cook over medium heat for about 15 minutes. Season roast with salt and pepper. Cut the meat into slices and arrange on plates with the fried vegetables and potatoes.
