- 400 grams colorful Fusilli
- 400 grams Tomatoes
- 1 shallot
- 1 garlic clove
- 3 Tbsps olive oil
- 2 tsps balsamic vinegar
- salt
- peppers (from the mill)
- ½ bunch Basil
- 50 grams black Olives (without stone)
- 40 grams Parmesan

Preparation steps
1.
Cook pasta in boiling salted water until al dente. Drain.
2.
Halve the tomatoes, blanch for a few seconds, remove from heat, peel, quarter, core and dice.
3.
Peel and finely chop the shallots, then sautée in olive oil. Squeeze in the garlic through a garlic press, add the tomatoes, salt, pepper and balsamic vinegar and cook for about 8 minutes.
4.
Shave the parmesan.
5.
Halve the olives and combine with the pasta, basil leaves and tomato sauce. Mix, heat and serve sprinkled with parmesan shavings.
