Mediterranean Chicken Thighs
Rinse chicken thighs and pat dry. Brush thighs with olive oil and season with salt and pepper. Place chicken in a roasting pan and bake in a preheated oven at 200°C (approximately 400°F), about 30 minutes. After 15 minutes of roasting time, add a cup of salted water to the pan. During roasting, occasionally baste chicken with water.
Meanwhile, blanch tomatoes for a few seconds in boiling water, then, rinse, peel, quarter and remove seeds. Peel and chop garlic. Rinse rosemary, shake dry and separate into smaller sprigs if desired.
Add tomatoes, garlic, olives and rosemary to the roasting pan after the chicken has roasted 30 minutes. Reduce oven temperature to180°C (approximately 350°F) and roast 10 minutes more.
