Mediterranean Chicken Patties
Heat a grill to hot. In a large mixing bowl, combine the Espelette pepper, chicken mince, breadcrumbs, egg and basil and season with salt and pepper.
Mix thoroughly and shape into 8 even sized balls. Flatten with your palm and grill, in batches if necessary, for 8-10 minutes, turning occasionally, until golden brown all over.
Remove and arrange stacked with small sheets of parchment paper between the patties, on a serving plate. Top with lemon wedges and basil sprigs. Garnish with the flaked salt and serve immediately.
