What does spelt have over its relative wheat? The enormous mineral content! Especially iron, the mineral that is crucial for blood formation and therefore especially interesting for women, is contained more.

The olives, on the other hand, score points with their high content of B group vitamins. For example, thiamine (vitamin B1) and folic acid are vitamins that our body cannot produce itself and are therefore essential for us. Folic acid is an elementary contribution to the renewal of cells and thiamine is of great importance for our nervous system.

Instead of dry yeast you can also use fresh yeast: To do this, crush a cube of fresh yeast into about 100 millilitres of water and stir until the yeast has completely dissolved. Then add the other ingredients and the remaining water and continue as described in the recipe.

With the herbs you can try as you please: if you don't like mint in combination, you can replace it with, for example, oregano.

1 bunch mixed Fresh herbs (such as parsley, basil, and mint)
200 grams black, pitted Olives
700 grams Pastry flour
2 tsps salt
2 packets Dry yeast
450 milliliters water

Preparation steps

Peel the onions and finely chop.

Slice the sun-dried tomatoes into thin strips.

Rinse the herbs, shake dry, pluck the leaves and finely chop. Combine all the ingredients in a large bowl and mix vigorously. Knead the dough on a floured surface for about 10 minutes until smooth. Transfer the finished dough into a greased baking pan and spread evenly. Cover and let rise in a warm place for at least 30 minutes. Bake in a preheated 200°C (approximately 400°F) oven until golden brown, about 50 minutes.
