- 2 slices Whole Wheat Toast
- 3 sprigs cilantro
- 2 scallions
- 1 garlic clove
- 600 grams Ground meat (mixed)
- 1 egg
- salt
- 1 tsp cilantro (ground)
- ½ tsp Harissa
- ½ tsp Lime zest (organic)
- 5 Tbsps breadcrumbs
- 60 milliliters olive oil

Preparation steps

Soak the toast in a little lukewarm water. Rinse the cilantro, shake dry and finely chop the leaves. Trim, rinse and chop the scallions. Peel garlic and finely dice. Mix the ground beef in a bowl with the expressed toast. Add cilantro, scallions, garlic and egg. Knead with hands to form a smooth, well-moldable meat mixture. Season well with salt, ground coriander, harissa and lime zest. With moistened hands form small balls and roll around in the breadcrumbs.

Cook in hot oil in a pan until golden brown on all sides, about 10 minutes. Drain on paper towels. Serve at a picnic hot or cold as desired.
