Meat and Vegetable Stew (Soljanka)

- 2 red Bell pepper
- 250 grams onions
- 1 garlic clove
- 100 grams Pickled cucumber (with liquid)
- 100 grams smoked Pancetta
- 2 Tbsps vegetable oil
- 80 grams Tomato paste
- 900 milliliters Beef broth
- 2 bay leaves
- 3 allspice
- 1 tsp Mustard seed
- salt
- freshly ground peppers
- sweet ground paprika
- 200 grams cooked Meat (such as pork, beef, chicken)
- 100 grams Smoked pork chop
- 150 grams Salami
- 200 grams Jagdwurst
- 2 Tbsps freshly chopped parsley
- Dill (for garnish)
- 4 Tbsps sour Whipped cream
Preparation steps
Rinse bell peppers, cut in half, remove seeds and ribs and cut into bite-size pieces. Peel onions and garlic, cut onions in narrow columns and finely chop the garlic. Drain pickles and cut into small cubes.
Cut pancetta into strips and fry with onions and garlic in a saucepan with 2 tablespoons of hot oil. Add bell peppers and pickles and sauté briefly, stir in tomato puree and pour in broth. Add spices, season with salt, pepper and paprika and simmer for about 30 minutes over medium heat. Cut meat, smoked pork, salami and sausage into 1 cm (approximately 3/8 inch) small cubes. Add to stew and simmer for another 10 minutes and season with salt, pepper and pickle liquid. Sprinkle with parsley and serve immediately, garnished with dill and sour cream.
