Preparation steps

Peel the garlic and press through a garlic press into a bowl. Add the olive oil and mint, season with salt and pepper. Rinse and trim the zucchini and thinly slice lengthwise with a vegetable peeler.  

Rinse the peppers, halve lengthwise, remove the seeds and white ribs and cut into bite-size cubes. Rinse the tomatoes. Drain the cheese and cut into cubes. Lay the zucchini flat in a plastic bowl add the remaining vegetables and the cheese and pour the olive oil mixture over. Cover and marinate in the refrigerator at least 1 hour.

Lift the vegetalbes and cheese from the marinade, reserve the marinade. Alternately thread the marinated vegetables and cheese on skewers, folding the zucchini over on itself.

Heat the remaining marinade in a large skillet and saute the skewers until golden brown on all sides, repeatedly brushing with the marinade. If desired, the skewers can be cooked on a hot grill in an aluminum dish.

Serve as desired with ciabatta or flatbread.
