200 milliliters apple cider vinegar
200 milliliters Apple juice
2 red chili peppers
6 cloves
2 Star anise
2 Tbsps sugar
1 tsp salt

Preparation steps

1.

Remove the zest from the lemon, and squeeze the juice. Coarsely dice the pumpkin, then add to a pot with the vinegar, apple juice, chili peppers, cloves, star anise, sugar, and salt.

Bring to a boil, and then cook for 10 minutes over low heat until the pumpkin is al dente. Fill into prepared jars, seal immediately, then let cool. Let marinate for at least 2 days before using.
