600 grams Wild mushroom (such as porcini mushrooms, chestnuts, Rotkappen)
1 sprig rosemary
1 sprig Lemon thyme
2 garlic cloves
250 milliliters White vinegar
3 Juniper berries
2 peppercorns
1 tsp Mustard seed
1 bay leaf

Preparation steps

Clean mushrooms and cut into pieces. Rinse herbs, shake dry and pluck off leaves. Peel garlic and cut into slices.

Combine vinegar with 250 ml (approximately 1 cup) of water, spices and herbs in a pot, bring to a boil. Season with salt and add mushrooms, simmer for 10 minutes. Place mushrooms with marinade and spices into prepared preserving jars, top with olive oil and seal well. Keep in a cool and dark place for at least 1 week. Serve.
