450 grams mixed Wild mushroom
100 milliliters White vinegar
200 milliliters dry white wine
1 tsp Juniper berries
5 peppercorns
2 garlic cloves
5 fresh thyme
350 milliliters olive oil

Preparation steps

1.

Clean the mushrooms, and wipe with a damp kitchen towel. Halve or quarter the mushrooms, depending on size.

Bring the vinegar, wine, juniper berries, peppercorns, and 100 ml (approximately 3 ounces) of water to boil in a pot. Add the mushrooms and cook for 5 minutes. Peel and quarter the garlic. Rinse and dry the sprigs of thyme.

3.

Drain the mushrooms in a colander, and transfer into clean jars. Divide the garlic, and place on top of the mushrooms. Do the same with the sprigs of thyme. Add enough olive oil to cover the mushrooms. Seal tightly, and keep in the refrigerator.
