- 4 kitchen-ready Mackerel (scales removed, headless)
- 5 white onions
- 10 bay leaves
- 1 lemon (cut in slices)
- 2 Tbsps Juniper berries
- 3 lemons (juiced)
- freshly ground peppers
- salt
- 1 Tbsp sugar
- 1 l water
- Mustard sauce
- 4 Tbsps Mayonnaise
- 2 Tbsps grainy Mustard
- 50 grams black Olives (pitted)

Preparation steps

Peel onion and cut into rings. Cut each mackerel into 4 pieces. Bring water, bay leaves, juniper berries, sugar, salt to taste and plenty of pepper to a boil. Add lemon juice, lemon slices and onion rings. Set aside. Place mackerel in the hot broth and marinate 4 -5 hours.

For the mustard sauce, mix mustard with mayonnaise and chopped olives. Serve sauce with drained fish. Serve fresh tomatoes on the side, if desired.
