1 tsp sweet paprika
2 Chicken breasts (skinned)
1 onion (finely sliced)
1 clove garlic cloves (finely chopped)
1 red Bell pepper (deseeded and sliced)
1 yellow Bell pepper (deseeded and sliced)
1 green Bell pepper (deseeded and sliced)
1 red chili pepper (deseeded and very finely chopped)
½ cup Chicken broth
1 Lime (cut into wedges to garnish)
parsley (to serve)
8 Flour tortillas (to serve)

1 Skillet, 1 Small bowl, 1 Plate, 1 Measuring cups, 1 Cutting board, 1 Large knife, 1 Small knife, 1 Tablespoon, 1 Teaspoon, 1 Wooden spoon, 1 Aluminum foil

Preparation steps

Mix 2 tbsp of the olive oil with the lime juice and paprika, season with salt and pepper and rub into the chicken breasts. Set aside to marinade for 30 minutes.

Heat 3 tbsp oil in a deep skillet and gently cook the onion until softened but not brown. Add the garlic, the bell peppers and chile pepper and cook for 5 minutes.

Pour over the chicken broth, season with salt and pepper and let bubble until most of the liquid has evaporated. Set aside and keep warm.

Brush a clean skillet or griddle pan with the remaining oil and heat until smoking. Cook the chicken breasts for about 4 minutes each side or until cooked through and golden brown.

Slice the chicken and arrange it on top of the tortillas. Top with the pepper mixture. Garnish with lime wedges and parsley.
