Preparation steps

1.

Thoroughly rinse the asparagus. Peel the asparagus, and trim off the hard woody ends. Blanch the asparagus in boiling water with a little sugar and butter for 18 minutes. Remove from the cooking liquid, and drain thoroughly.

Rinse, trim, and finely chop the radishes. Rinse and quarter the apple. Remove the core, finely dice, and mix with the lemon juice.

3.

Mix the mustard, vinegar, and oil to form a vinaigrette. Season the vinaigrette with 1 pinch of sugar, salt, and pepper. Fold the radish, diced radish, and chives into the dressing.

4.

Place the asparagus on a platter, top with the radish vinaigrette, and serve immediately.
