500 grams white Asparagus
250 grams green Asparagus

Juice of 1 lemons
1 pinch sugar
40 grams Parmesan

Preparation steps

Rinse beef and pat dry. Mix lemon zest with pepper to taste, 1 teaspoon curry and 2 tablespoons olive oil. Peel garlic and press through a garlic press into marinade. Rub beef with marinade, wrap in foil and refrigerate overnight. Peel and rinse asparagus and snap off ends. Shave asparagus into long, thin strips. Bring a pot of salted water to a boil. Add asparagus, bring to a boil again, and immediately drain in colander. Rinse with cold water, drain well and pat asparagus dry between paper towels.

For the dressing, whisk remaining olive oil with salt and pepper to taste, lemon juice and sugar. Mix asparagus with dressing. With a very sharp knife, cut beef into thin slices. Break Parmesan into pieces. Lay beef slices on asparagus and top with Parmesan. Serve dusted with a little curry powder.
