20 grams butter
60 grams sugar
50 milliliters dry white wine
2 sprigs mint

Preparation steps

For the chicken: Preheat the grill. Rinse the chicken breasts, pat dry, and cut into 2 cm (approximately 3/4 inch) wide strips. Season them with salt and pepper. In a preheated skillet, cook the chicken in the butter until golden. Remove and allow to cool briefly before placing on wooden skewers.

For the glaze: Peel and finely chop the onion and garlic. Peel and dice the mango. In the same pan that the chicken cooked in, combine the onion, garlic, mango, and sugar together, along with the remaining fat in the pan. Add the chicken to the pan and sauté for 3-4 minutes. Deglaze the pan with the wine and let reduce until a small amount remains.

Rinse the mint, shake dry, pluck off the leaves and chop finely. Sprinkle the chicken skewers with the mint and place under a broiler until caramelized, about 2 minutes. Remove and serve immediately.
