Macaroni-chicken Salad

- 100 grams macaroni
- salt
- cayenne pepper
- 1 tsp vegetable oil
- ¼ Iceberg lettuce
- 3 scallions
- 1 Fennel bulb
- 1 Tomato
- 100 grams blue Grape
- 100 grams smoked Chicken breasts
- 50 milliliters Whipped cream
- 2 Tbsps Crème fraiche
- 1 Tbsp lemon juice
- 1 Tbsp Ketchup
- 1 tsp thyme
- 1 tsp Tarragon (chopped)
Preparation steps
Cook macaraoni according to package instructions in plenty of salted water until al dente. Drain in a colander. Mix macaroni with vegetable oil in a large bowl and allow to cool to lukewarm.
Rinse the lettuce, spin dry and cut into strips. Trim scallions, rinse and cut into thin rings. Halve fennel, rinse and cut out the stalk. Cut the halves crosswise into thin strips. Set aside fennel leaves for garnish. Rinse the tomatoes, remove the stems and dice into small cubes.
Rinse the grapes, pat dry, pluck off stems, cut in half and remove seeds. Dice chicken breast into cubes. Add all chopped ingredients to the macaroni.
Stir together the whipping cream and creme fraiche with lemon juice, ketchup, thyme and tarragon. Add to the salad ingredients in the bowl and mix everything together. Season the salad with salt and cayenne pepper and serve.
