2 ¼ cups macaroni
¼ cup butter
1 small onion (finely chopped)
3 large eggs
1 ⅔ cups cream (18% fat)
4 slices cooked ham cut into 1.5 cm (1/2" pieces)
¼ tsp cayenne pepper
¼ tsp grated Nutmeg
1 tsp chopped, green chili peppers (optional)
2 cups grated Cheddar cheese
½ cup finely grated Parmesan
salt (to taste)

Preparation steps

1.
Heat the oven to 160°C (140° fan) 325°F gas 3. Grease a 23 cm|9" baking tin or dish.

Cook the macaroni according to the packet instructions. Drain and leave to cool slightly.
3.
Heat the butter in a frying pan and cook the onion until soft but not browned.
4.
In a large bowl, whisk together the eggs and evaporated milk. Add the macaroni with the onion and butter remaining in the pan. Stir in the remaining ingredients until evenly mixed.
5.
Put into the baking tin and bake for 30-40 minutes until bubbling. Remove from the oven and leave to stand for 10 minutes before cutting into squares.
