- 4 Tbsps butter
- 6 strips Bacon (chopped)
- 2 cloves garlic cloves (pressed)
- 3 Tbsps flour
- 4 cups milk
- 2 tsps salt
- 1 tsp ground Black pepper
- 2 ½ cups extra sharp Cheddar cheese (shredded)
- 1 ½ cups Asiago cheese (grated)
- 3 Tbsps fresh parsley (finely chopped)
- 8 cups Elbow macaroni (cooked and drained)

Preparation steps
1.
Preheat oven to 400º F / 200º C

Melt butter in a large pot over medium heat. Add bacon and gently fry for 4 minutes, add garlic and cook until fragrant, about 1 minute.

Whisk in flour and cook, stirring frequently, until mixture is golden brown, 2-3 minutes.

Whisk in the milk, gradually. Add salt, and pepper. Reduce heat and cook, stirring frequently, about 5 minutes or until the sauce thickens.
5.
Add the cheese and parsley, stir until the cheese is melted. Add the cooked pasta and stir until the pasta is completely coated.
6.
Transfer the pasta to individual casserole dishes.
7.
Bake for 25 to 30 minutes, until the pasta is golden and bubbly. Serve.
