Ingredients

1 Red Bell pepper
1 yellow Bell pepper
1 Zucchini
150 grams Red onion
6 tablespoons Olive oil
2 tablespoons Lemon juice
Salt
freshly ground pepper
1 piece Galangal
2 tablespoons Mango chutney
3 tablespoons Soy sauce
4 Lobster tails

Preparation steps

Rinse and cut the peppers into quarters. Rinse the zucchini. Peel the onion. Cut the vegetables into strips. Heat 4 tablespoons of olive oil in a pan and briefly toss vegetables in it. Season with lemon juice, salt and pepper.

Thoroughly rinse the galangal and cut into thin slices. Heat 2 tbsp oil in a pan and sauté the slices briefly.

Remove the slices. Add the mango chutney and soy sauce to the pan and stir. Arrange the lobster halves with galangal and the sauce. Garnish with lemon and serve with the vegetables.
