4 lobsters about 800 grams each, approximately 2 pounds)
150 grams Crème fraiche
2 Tbsps Lime juice
1 Tbsp freshly chopped Basil
salt

Preparation steps

1.

Bring 2-3 liters of water (approximately 2-3 quarts) to boil in a pot. Put the lobster head first into the bubbling water and cook until tender, about 15 minutes.

Meanwhile, mix the crème fraîche with the lime juice and the basil and season with salt.

3.

Lift the lobster from the water and drain well. Place on a wooden board and break with scissors. Halve the lobster lengthwise and arrange on a plate or plates.

4.

Spread the cut surfaces with cream and garnish with lime slices.
