1 egg white
2 Pineapple
1 Orange
2 Kiwi
2 Figs
1 Star fruit
1 pomegranate
1 bright Dragon fruit
1 sprig fresh mint

Preparation steps

1.

Boil the sugar with 5 ml (approximately 1/4 cup) of water until syrupy and let cool. Stir in the lime juice and wine. Beat the egg whites until very stiff and fold into the lime mixture. Pour into a rimmed baking sheet and place in the freezer for 4 hours, stirring occasionally.

Halve the pineapples and cut out the flesh, reserving hollowed-out halves as cups. Remove the tough core and cut the flesh into cubes. Cut figs into slices. Halve the pomegranate and detach the seeds. Peel the orange and cut into thick segments. Peel the kiwis and cut into pieces.

Slice the starfruit. Peel and slice the dragon fruit. To serve, scoop the lime sorbet onto 4 plates. Place a pineapple half on each plate and fill with the prepared fruit, sprinkle with pomegranate seeds and garnish with mint. Serve immediately.
