Preparation steps

1.

Slice the tops off of the lemons. Cut a thin slice from the bottom of the lemons so that they will stand upright. Scoop out the fruit, then pass it through a fine strainer, reserving the juice.

Separate the eggs. Beat the egg yolks with half of the sugar and 6 tablespoons of lemon juice over a water bath until creamy.

Preheat the oven to 180°C (approximately 350°F). Beat the egg whites with the remaining sugar until stiff, and then fold with the flour into the egg yolk mixture. Divide into the hollowed lemons. Bake fore 15 minutes, remove from the oven, and serve immediately.
