- butter (for the ramekins)
- ⅓ cup butter
- 4 eggs (separated)
- 1 Tbsp freshly chopped parsley
- 1 pinch freshly grated Nutmeg
- 1 ½ cups freshly grated Cheese (e. g. Emmental, Gruyere)
- 4 Tbsps cream (30%)
- 2 Tbsps Crème fraiche
- 2 Tbsps flour

Preparation steps
1.
Heat the oven to 200°C conventional / 180°C fan assisted / 400°F / gas 6.
2.
Grease the ovenproof ramekins with melted butter and scatter with breadcrumbs.
3.
Beat the butter, egg yolks, parsley and nutmeg until creamy.
4.
Stir in small amounts of the cheese, cream and crème fraiche until everything is well combined.
5.
Beat the egg whites until stiff and fold into the cheese mixture along with the flour and season with a pinch of salt.
6.
Pour into the ramekins and bake in the oven for around 15 minutes until golden brown. Serve immediately.
