- 3 ⅓ cups Strawberries (100 g halved and set aside to put in the jelly)
- ⅓ cup sugar
- 3 Tbsps lemon juice
- 5 sheets white gelatin
- 2 sheets red gelatin
- 2 cups Strawberry juice (or apple juice)
- 1 cup whipping cream (at least 30% fat, well chilled)
- fresh Berry (as desired)

1 Cutting board, 1 Large knife, 1 Tablespoon, 1 Mixing bowl, 1 Knife, 1 Kitchen scale, 1 Bowl, 1 Wooden spoon, 1 Hand mixer, 1 Grater, 1 Rolling pin, 1 Baking sheet, 1 Parchment paper, 1 Small knife
Preparation steps
1.
Marinate the remaining strawberries with the sugar and lemon juice for 1 hour.
2.
Soften the gelatine in cold water.
3.
Puree half the strawberries and sieve. Mix the puree with the strawberry or apple juice.
4.
Wring out the gelatine and dissolve in warm water. Stir in some of the strawberry mixture then add the rest and stir in until cold.
5.
Pour into damp glasses and add the halved strawberries. Chill in the fridge for approx. 4 hours.
6.
Whip the cream (pre-sweeten to taste if desired) and place on top of the jelly. Garnish with fresh berries.
