8 King prawn (peeled)
5 Tbsps olive oil
1 clove garlic cloves (finely chopped)
1 tsp paprika
1 scallion (finely shredded)
1 large, ripe Mango (peeled, stone removed and sliced)
1 Lime (juiced)
1 tsp Maple syrup
1 red chili pepper (deseeded and finely shredded)
cilantro (to garnish)

Preparation steps

1.
Mix the prawns with 2 tablespoons of the oil, the garlic and paprika. Set aside to marinate for 15 minutes.
2.
Drop the spring onion into iced water so they begin to curl.
3.
Heat the remaining oil in a frying pan (skillet) and cook the prawns for about 2 minutes, stirring frequently, or until cooked through.
4.
Arrange the prawns, mango and spring onions on serving plates. Mix the lime juice and maple syrup and drizzle over the salad.
5.
Scatter over the chilli pepper and coriander and serve immediately.
