Mache lettuce is also known as butter or lamb's lettuce.

- 9 ozs lamb's lettuce
- 2 garlic cloves
- 3 Tbsps Pine nuts
- 3 ozs grapeseed oil (or olive oil)
- ½ cup freshly grated Parmesan
- 6 ozs Ricotta cheese
- Sea salt

Preparation steps
1.
Rinse, trim, and dry the mache. Peel the garlic cloves, then puree together with the mache, pine nuts, and about half of the oil in a blender. Gradually incorporate the remaining oil, until your desired consistency is reached. Transfer to a bowl, mix with the parmesan and ricotta, and season to taste with salt.
2.
Transfer to a jar, and keep in the refrigerator. The pesto will last 2-3 days.
