- 600 grams lamb (from the shoulder)
- 1 garlic clove (pressed)
- 2 Tbsps vegetable oil
- 4 small red onions
- 4 Tbsps chopped cilantro (substitute parsley leaves, if desired)
- 8 Limes
- salt
- freshly ground peppers
- 2 Tbsps clarified butter
- 8 metal or Wooden skewers

Preparation steps

Cut lamb into bite-sized cubes. Squeeze juice from 1 lime and add the meat to a bowl with the lime juice, garlic, pepper and some cilantro. Marinate briefly. Rinse the remaining lime and cut lengthwise into wedges. Peel the onions and cut them lengthwise into strips. If using wooden skewers, soak skewers in water for 5-10 minutes. Thread meat alternating with the onions and lime wedges on the skewers.

Heat the clarified butter in a pan and fry the skewers until golden brown, 4-7 minutes. Season with salt and pepper and serve sprinkled with cilantro.
