1 day-old White roll
1 small onion
2 garlic cloves
1 Tbsp olive oil
500 grams Ground lamb
1 egg
2 Tbsps finely chopped cilantro

1 Tbsp breadcrumbs (as needed)

Preparation steps

Soak roll in cold water.

Peel the onion and garlic and chop finely. Heat the oil in a pan, add the onion and garlic and cook until soft. Transfer to a bowl and add ground lamb, egg and chopped cilantro. Squeeze out roll, tear into pieces and add to the bowl. Knead mixture until smooth and season with salt, pepper, and chile pepper. If the mixture is too soft, knead in breadcrumbs as needed. With wet hands, shape mixture into small meatballs and place in an oiled baking dish.

Preheat the oven to 200°C (approximately 400°F).

Rinse the tomatoes and cut into pieces. Cut the onion into rings. Add the tomatoes and the onion to the meatballs into the baking dish and bake in the oven for about 30 minutes.

Transfer meatballs and vegetables to a serving dish and sprinkle with cilantro leaves. Serve with pasta or fresh white bread, if desired.
