14 ozs lamb (cut from the leg into 8 portions)
2 Tbsps olive oil
2 Tbsps Red wine vinegar
lemon juice (from 1 lemon)
1 Tbsp dried oregano
For the salsa
2 red peppers (deseeded and finely chopped)
2 Tomatoes (deseeded and finely chopped)
2 shallots (finely chopped)
1 Zucchini (finely chopped)
4 Tbsps olive oil
2 Tbsps Red wine vinegar

Preparation steps

1.
Cook the couscous according to packet instructions, fluff up with a fork and keep warm.

Mix the olive oil, vinegar, lemon juice and oregano, season with salt and pepper and rub into the meat pieces.
3.
To make the salsa, mix together the ingredients, season with salt and pepper and set aside.
4.
Soak the wooden skewers briefly in cold water. Thread the meat pieces onto the skewers and grill for about 6 minutes each side.
5.
Serve the kebabs with the couscous and pepper salsa.
