2 cloves garlic cloves (minced)
1 small onion (peeled and minced)
1 tsp ground Cumin
1 tsp ground paprika
1 tsp ground cilantro
1 tsp White pepper
½ tsp ground ginger
¼ cup good-quality extra virgin olive oil
2 cups Penne

1 red Bell pepper (washed; seeded and sliced into thick strips)

Lay a piece of aluminium foil under the exposed bones to prevent charring.

Preparation steps

Place 1 teaspoon salt, garlic and minced onion in a small bowl and mash to a smooth paste with the back of a wooden spoon. Mix in the cumin, paprika, coriander, pepper, ginger, and oil. Stir to incorporate. Spread the spice mixture all over the meaty parts of the lamb.

Cover and marinate in the refrigerator for 3 to 4 hours.

Set grill up for direct grilling and preheat to medium-high. Place marinated lamb on hot grate, and grill until cooked to taste, 8 to 12 minutes per side for medium rare. Cooking time will be less, if cooking individual lamb chops. Use an instant-read thermometer to check for doneness. Do not over cook.

Transfer lamb to a serving platter and let rest for 3 to 5 minutes. Carve rack into chops if necessary. Serve with Penne pasta and your favorite grilled vegetables.

Prepare Penne pasta Al dente according to package instructions.

In a small bowl mix garlic, rosemary, salt, pepper and olive oil.

Lightly brush vegetables with herbed oil, reserving any left over oil. Using wooden skewers or a grill basket - grill vegetables until softened but still crisp.

Plate the lamb chops, pasta topped with grilled vegetables, and drizzle with the remaining herbed olive oil.
