14 ozs lamb meat
2 onions
2 garlic cloves
2 Tbsps olive oil
½ oz Tomato paste (1 TBSP.)
5 ozs red Grape juice
14 ozs strained tomato
26 ozs meat broth
1 Cinnamon stick
Iodized salt (With fluoride)
peppers
18 ozs pumpkin flesh (or butternut squash)
3 ½ ozs Cherry tomatoes
12 ozs Pasta -rice noodles (aka Kritharáki noodles) or other small noodles
2 Chervil

Preparation steps

1.

Rinse lamb, pat dry and dice. Peel onions and garlic, dice onions and finely chop garlic.

Heat the oil in a casserole. Brown the meat in it over high heat for 5-7 minutes. Add onions and garlic and fry for 4 minutes. Add tomato paste, fry for 2 minutes and let it caramelize.

Deglaze with grape juice. Add strained tomatoes, broth and cinnamon, salt, pepper and simmer the stew for 1 hour on low heat, stirring occasionally.

Meanwhile, dice the pumpkin pulp. After about 1 hour, add to the pot and simmer for 15 minutes. Meanwhile, clean and wash cherry tomatoes. Add to the stew together with the pasta rice after 15 minutes and continue cooking for another 10-15 minutes.

5.

Wash chervil and shake dry. Season stew to taste and serve garnished with chervil.
