3.333 cups floury potatoes (peeled)
5.333 cups minced lamb
2 Tbsps vegetable oil
1 onion (diced)
2 cloves garlic cloves (diced)
1 carrot (diced)
1 stick Celery (diced)
1 Tbsp ground paprika
2 Tbsps tomato puree
2 Tbsps flour
2 cups Meat stock
¾ cup sweet Corn (frozen)
¾ cup peas (frozen)
cup hot cream
1 tsp hot Mustard
2 Tbsps butter
Nutmeg (freshly grated)
1 egg (beaten)

Preparation steps

1.
Cook the potatoes in salt water for around 30 minutes.

Fry the meat in hot oil. Add the vegetables, paprika powder and the tomato purée and fry for 2-3 minutes. Sprinkle with the flour and then deglaze with the stock. Simmer for around 20 minutes until thick. Remove from the heat, stir in the sweetcorn and the peas and season with salt and ground black pepper.

Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6.

Drain and mash the potatoes. Add the cream, mustard and the butter and mash well. Season with salt, ground black pepper and nutmeg.

Place the meat sauce in a large pie dish. Top with the mashed potatoes and brush with the beaten egg. Bake for around 35 minutes until golden brown.
