500 grams Whole Grain Rye Rolls
100 grams Rye flour
½ cube Yeast (21 g)

Preparation steps

Preheat oven to 250°C (approximately 475°F). Cut bread into slices, place on a baking sheet lined with parchment paper and toast in oven until dark brown. Remove bread from oven, sprinkle with flour and place in a saucepan. Pour 2 liters boiling water over bread and let soak for about 3 hours.

Strain soaked bread through a cloth. Mix yeast, sugar and 150 ml (aproximately 2/3 cup) lukewarm water, add to strained liquid and let stand for one day in a warm place. Strain liquid and pour into decorative bottles. Close bottles and refrigerate kvass 1 week before serving.
