Kiwi and Melon Popsicles

Kiwi is a fruit that contains many vitamins and minerals and can potentially help treat asthma, aid in digestion, boost the immune system, and countless other things.
You can keep the kiwi and melon separate, or you can combine them into one popsicle for a fun variation. You can even alternate them so they are in a striped pattern!
Ingredients
- For the kiwi popsicles
- 14 ozs Kiwi
- 3 ½ ozs sugar
- 1 Lime (zested and juiced)
- 1 egg white
- Wooden stick
- tall and narrow paper Cup (or popsicle mold)
- For the melon popsicles
- 14 ozs honeydew melon
- 3 ½ ozs sugar
- 1 Lime (zested and juiced)
- 1 egg white
- Wooden stick
- tall and narrow paper Cup (or popsicle mold)
Preparation steps
For the kiwi popsicles: Peel the kiwis and cut one into thin slices and puree the rest in a blender or food processor. Strain the puree through a fine mesh sieve.
Boil the sugar with 4 tablespoons of water until syrupy. Allow the syrup to cool then mix with the kiwi puree, lime zest and lime juice. Beat the egg whites until stiff and fold into the kiwi mixture. Transfer the mixture to the freezer and freeze until very cold, but not frozen.
Line the inside of the popsicle mold or paper cups with the kiwi slices. Pour the mixture into the cups, insert a wooden stick into each and freeze for 2-3 hours.
For the melon popsicles: Puree the honeydew in a blender or food processor and strain through a fine mesh sieve.
Boil the sugar with 4 tablespoons of water until syrupy. Allow to cool and mix with the melon puree, lime zest and lime juice. Beat the egg whites until stiff and fold into the melon puree. Transfer the mixture to the freezer and freeze until very cold, but not frozen. Pour the mixture into the popsicle mold or paper cups, insert a wooden stick into each and freeze for 2-3 hours.
