500 grams King prawn (cleaned and deveined, ready to cook)
100 milliliters Whipped cream
salt
cayenne pepper
1 splash lemon juice
40 grams Chives
3 sprigs Dill

Preparation steps

1.

Rinse the king prawns, pat dry and let freeze in the freezer for about 10 minutes.

Mix the cream, salt and cayenne pepper and make a puree in a blender. Rub the king prawns with lemon juice and shape each into small balls (best with damp hands).

Drop the king prawn balls into hot salted water and poach for about 10 minutes.

Rinse the chives and dill, shake dry, cut the chives in small rings, and finely chop the dill. Lift the cooked king prawn balls with a slotted spoon from the water and coat with the herbs.

4.

Serve hot or cool.
