100 grams sun-dried Tomatoes (in oil)
1 onion
2 garlic cloves
1 Red Bell pepper
4 allspice
1 bay leaf
1 cloves
½ Cinnamon stick
4 Tbsps brown sugar
1 tsp mustard powder
100 milliliters Wine vinegar
salt

Preparation steps

Rinse the tomatoes, remove the stalks, and coarsely chop. Drain the sun-dried tomatoes, reserving the oil. Peel the onion and garlic. Finely dice the onion, and cut the garlic into slices. Rinse and halve the pepper. Remove the seeds and finely dice. Add the allspice, bay leaf, clove and cinnamon to a piece of cheesecloth, and seal with a piece of kitchen twine.

Sweat the onion garlic, and pepper in 2 tablespoons of the reserved tomato oil. Add the tomatoes and the sun-dried tomatoes. Add the spice bag, and simmer for 15 minutes. Mix in the sugar, mustard powder, and the vinegar. Simmer another 10-15 minutes, until thickened. Remove the spice bag and puree completely. Season to taste with salt and cayenne pepper.

Pour the ketchup in jars or bottles. Seal tightly and place in the refrigerator.
