- 800 grams Tomatoes
- 1 onion
- 2 garlic cloves
- 1 red Bell pepper
- 2 Tbsps olive oil
- 4 allspice
- 1 bay leaf
- 1 cloves
- 1 Cinnamon stick
- 2 sprigs parsley
- 1 sprig Lovage
- 4 Tbsps brown sugar
- 1 tsp mustard powder
- 100 milliliters Wine vinegar
- salt
- cayenne pepper

Preparation steps

Rinse the tomatoes, remove the cores, and coarsely chop. Peel and finely dice the onion and garlic. Rinse and halve the peppers. Remove the seeds, and dice.

Sauté the onion, garlic, and peppers in the oil. Add the allspice, bay leaf, clove, and cinnamon. Sauté briefly, then add the tomato and simmer for 15 minutes. Add the herbs, sugar, mustard powder, and vinegar. Simmer for 10-15 minutes more until thickened. Pass through a fine strainer, then return to a boil. Season to taste with salt and cayenne pepper. Place in a sterilized bottle, seal, and cool completely.
