- 8 large carrots (peeled)
- 3 large Sweet potato (peeled)
- 2 Red onions (peeled)
- salt (to taste)
- 3 Tbsps honey
- 1 Tbsp freshly squeezed lemon juice
- 3 Tbsps butter
- 3 Tbsps flour
- freshly ground Black pepper (to taste)

Preparation steps

Cut the carrots and sweet potatoes in large chunks. Cut the onions into wedges. Put the vegetables into a heavy stew pot and add just enough water to cover the vegetables. Cover and boil for 5 to 10 minutes, until al dente. Add the salt, honey and lemon juice. Reduce the heat and simmer, covered, for another 20 minutes.

Melt the butter and stir in the flour. Add to the vegetables and gently stir to incorporate. Season with salt and pepper. The vegetables can be browned quickly in the oven before serving if you wish.
