- 1 ½ cups dried, pitted Prune
- ⅔ cup raisins (packed)
- 8 ozs kosher Ground beef
- 1 onion (peeled and finely chopped)
- 1 egg
- 2 Tbsps ground Matzo
- salt (to taste)
- freshly ground peppers (to taste)
- 4 small, green Bell pepper
- 2 white onions (peeled and quartered)
- 6 shallots
- 4 cloves garlic cloves
- 3 Tbsps butter
- 1 cup water
- 2 Tbsps sugar
- freshly grated Nutmeg

Preparation steps

Soak the prunes and raisins in hot water for 20 minutes.

Knead the ground beef with the chopped onion, egg, matzo meal, salt and pepper.

Wash and core the peppers, removing the seeds but leaving the shape intact. Stuff the peppers with the ground beef mixture. Put the stuffed peppers into a shallow pan with the onion quarters, prunes and raisins, whole unpeeled shallots and garlic cloves, flakes of butter and water. Sprinkle with salt, sugar and nutmeg. Cover and cook over a low heat for 1 hour. Add an additional 1 to 2 tablespoons of water if the tzimmes boils down too quickly. Shortly before the end of cooking time, remove the lid to allow the any liquid to thicken. It should not be like a soup. Serve.
